1 Citrus Infused Water

This water is bursting with citrus and sinfully refreshing! Remember, water is the drink you can ever have. This recipe is pretty simple, just orange, lemon and lime all sliced up. You can infuse your favorite flavour in this tasty water.

Ingredients

8 cups water

1 pc orange

1 pc lemon

2 pcs lime

Method

Pour the water in a large pitcher. Add the orange, lemon and lime, all slice. Add some ice cubes and stir.

2 Mashed Potato Balls

This is just the right snack to make with your leftover mashed potatoes. Crisp and creamy, we just couldn’t wait for it to get ready! My Nigerians friends who love “ojojo” (water yam fritters) can cleave to this before the water yam comes back in season.

Ingredients

1 kg white sweet potato

1 tsp chives

2 cups vegetable oil

4 pcs bacon

125 g cheddar cheese

1 tsp chilli powder

2 pcs eggs

2 tbsp parmesan cheese

90 g panko bread crumbs

Method

Cook the bacon (diced) until brown and crispy for about 6-8 minutes in a large frying pan set over medium. Transfer to a paper towel-lined plate and set aside.

Heat the oil in a large stockpot or Dutch oven over medium heat. Combine the potatoes (boiled and mashed), chilli flakes, cheddar cheese, bacon and chives in a large bowl and mix thoroughly.

Using a small cookie spoon, roll the mixture into 1¼ to 1½ inch balls, forming about 25 balls.

Whisk the eggs in a bowl. Working on one at a time, dip each ball into the bowl of eggs and coat with bread crumbs. Repeat the same process for all the balls.

Cook in the oil for about 2-3 minutes or until golden and crispy, add more oil in the process if necessary. Transfer to a paper towel-lined plate.

Serve immediately with crumbled Parmesan (optional).

3 Strawberry Pina Colada

The coconut and pineapple blend of Pina Colada is naturally rejuvenating, so you just don’t want to sit there and not experience what if feels to have strawberries added to it. This 3 ingredients smoothie offers more than just hydration, it’s delicious!

Ingredients

225 g pineapple

160 g strawberry

190 g coconut milk

Method

Combine the pineapple (peeled and cut into chunks), strawberries (halved) and coconut milk in a blender. Blend on high power until smooth. Adjust the consistency of the smoothie with coconut milk.

4 Meatzza

You have seen pizza, omelette, indomielette and the likes but this one here… *lips sealed*. This is awesomeness in a plate and NO! It is not the same thing with suya. This is an ideal holiday recipe and it doesn’t take so much effort to prepare.

Ingredients

450 g minced meat

10 pcs rodo

1 bunch basil

2 tsp ground pepper

2 pcs tatase

1 pcs green bell pepper

1 tsp curry powder

2 tbsp white oat

6 pcs tomato

2 pcs onions

1 pinch thyme

1 tsp salt

2 pcs seasoning cubes

2 pcs eggs

2 scoops vegetable oil

Method

Using 4 tomatoes and 4 pepper (blended), prepare stew or sauce with vegetable oil, salt and stock cube.

Wash and slice the remaining tomatoes, pepper, onions. Set all aside.

Place your minced meat in a bowl, add all the spices and seasonings. Mix in well but also carefully.

Add in the oatmeal and eggs. The oatmeal is to bind everything together. you can make use of breadcrumbs but oatmeal is a healthier option.

Gently combine all the ingredients until it forms a ball. Emphasis on gently, don’ overwork the mince. If it is not holding up to a ball, either add another egg or little more oatmeal. Take out the mince and carefully lay out in a lightly greased pan, until all areas are covered

Spread out your stew or sauce unto the mince. Add your toppings – onions, tomatoes, rodo, sliced tatase, green pepper and morarella cheese

Cover with foil, to keep moist and then place in a preheated oven at 200 degrees and allow to cook for about 20 minutes. You will observe that the mince will shrink, but that is expected.

Before serving, top with fresh leaves.

5 Mushroom Fried Rice

You don’t have to like cooking to enjoy the high comfort that comes with this mushroom fried rice because with little effort, food is ready! The nutritious twist of mushroom is one reason to have this meal for dinner. A perfect one-pot meal for you!

Ingredients

200 g mushrooms

260 g basmati rice

1 pc onions

2 pcs garlic

1 tbsp unsalted butter

1 tsp salt

1 pc chilli

1 tsp chilli powder

1 pc lemon

1 tbsp vegetable oil

6 pcs parsley

Method

Firstly, chop the onions and chilli,, also mince the garlic and set aside. You will need to peel the lemon and grate the rind and squeeze the juice into a cup. Cook the rice according to instruction on the package and drain off water.

Wipe the mushrooms to remove dirt using a towel and cut the mushrooms into slices. Do not wash the mushrooms as mushrooms are like sponge and absorb too much water resulting in a very soggy meal.

Heat the oil and butter in a saucepan over medium-low heat and saute the mushroom for about 8-10 minutes or until brown and soft. Remove the mushroom from the hot oil and set aside .

Saute the onions in the hot oil for about 5 minutes, add the garlic and saute for another 5 minutes on medium-low heat. Add the grated lemon rind, chilli, rice and salt and chilli powder to taste. Toss the rice to mix everything.

Add the mushroom and stir thoroughly.

Serve and drizzle with lemon juice and garnish with fresh chopped parsley (optional).
