1 Plantain Lasagna
We love experimenting with plantain (yum!!) because it is so irresistible. We are here for any excuse to have that golden brown plantain incorporated in our meal. This different version of lasagna is inspired by our Caribbean brothers and sisters.
Ingredients
5 pcs plantain
3 pcs garlic cloves
1 pc onion
1 pc green pepper
1 teaspoon oregano
1 teaspoon cumin
2 pinches paprika
2 tbsps tomato paste
900 grams minced meat
1 cup green olives
2 pinches salt
1 teaspoon black pepper
2 tbsps tomato sauce
1 pc seasoning cube
1 cup green beans
4 pcs eggs
4 tbsps vegetable oil
2 tbsps unsalted butter
Method
Preheat oven to 350°F.
Peel the plantain and slice lengthwise. Fry until golden brown. Set aside. Chop ½ of the onion, green pepper and slice the olives to fill 4 tablespoons and green beans to fill 1 cup. Beat the eggs. Set aside.
Place another frying pan on medium heat. Pour in 2 teaspoons olive oil to heat up. Add in minced meat and allow to brown and mix with ½ onion (chopped), crushed garlic, oregano, cumin, paprika, black pepper and salt (optional). Stir contents and then add in the tomato paste, tomato sauce, olives and seasoning cube. Allow to cook for about 10 minutes.
Grease a 9″ x 13″ baking dish with butter and then pour ½ of the beaten eggs. Place plantain over the eggs to cover the dish length wise with no space in between, then about 1/3 of the meat sauce to cover, then green beans. Repeat the layer twice and top off with layer of plantain and then pour over remaining beaten eggs.
Bake for about 30 minutes. Allow to stand for a few minutes before serving.

2 Tropical Paw-Paw Smoothie
This smoothie combo is a taste of the Tropics. It is so refreshing and will have your taste buds jumping for joy. Paw-paw is a great antioxidant and good for your digestion. With the tropical paw-paw smoothie, you get the right combination of delicious and healthy.
Ingredients:
1 pc paw-paw
1 cup plain yoghurt
1 pc pineapple
1 cup squeezed juice from orange
1 pc banana
1 cup coconut milk
1 teaspoon honey
1 cup coconut water
Method:
Cut the skin and remove the seeds from the papaya and pineapple (where applicable). Cut the pineapple and papaya into chunks.
Combine ½ of the paw-paw, ½ cup pineapple chunks, ½ cup yoghurt, banana, 1/5 cup coconut milk, ¼ cup coconut water, 1 cup crushed ice, honey and ¼ cup squeezed orange juice in a smoothie blender.
Serve cool.

3 Chocolate Fudge Brownies
What is a nice date without dessert to top it all up? This brownie is a delicious chocolatey goodness that will have you coming back for more. The great thing is this recipe makes enough for seconds. Your dinner dates just got a sweet upgrade!
Ingredients
1 cup plain flour
2 pcs eggs
2 cups sugar
2 pinches salt
1 cup cocoa
1 teaspoon baking powder
1 cup unsalted butter
6 ounces dark chocolate
Method
Preheat the oven to about 350 degrees F and coat 8″ square baking pan/ware with butter or line with parchment paper.
Add ½ cup melted butter and melted chocolate into a bowl and stir. Mix in eggs and 1 and ½ cup sugar.
In another bowl combine 1/3 cup cocoa, ½ cup flour, ¼ teaspoon baking powder and salt. Add the dry ingredients into the wet and mix in well but do not over mix.
Pour the batter into the baking pan and spread evenly (double the recipe to fit in a 9″ x 13″ baking pan). Bake for about 40 minutes or until done. To check if done insert a toothpick in the centre and moist crumbs should be on the stick not batter. You can also give the pan a shake and if the brownie wobbles in the centre then it still needs to cook a bit more.
Take out the brownie from the oven and leave to cool. Cut into squares or rectangles.
Serve with chocolate sauce or ice cream (optional)

4 Jam Filled Crepes
Crepes otherwise known to Nigerians as pancakes are delicious on their own or with a sweet or savoury filling. For this recipe we chose something sweet but it also goes great with corned beef sauce, yum! who can resist.
Ingredients
1 cup plain flour
1 tbsp sugar
1 pinch salt
2 cups milk
2 pcs egg
4 tbsps unsalted butter
5 tbsps strawberry jam (or any other jam)
Method
Put flour, 1 ½ cup milk, sugar, eggs, salt, 2 tablespoons melted butter (be careful not to add hot melted butter, let it cool down) and salt into a blender.
Pour the blended mixture into a bowl, cover and leave at room temperature for about an hour.
Heat up your frying pan or skillet, and coat with butter.
Pour 1/3 cup of batter into pan and completely cover the bottom. Cook for about 3 minutes or until the underside is golden brown then flip it using a spatula. Cook the other side to golden brown too.
Repeat step 4 until all batter is exhausted and replenish pan with butter as you go on.
Spread 1 tablespoon jam on one side of the crepes and fold or roll.
Serve warm.
