Shrimp Scampi

Sometimes it seems like most pasta sauces are with meat but this recipe is us saying no. This delicate sauce goes great with your pasta, most especially linguini but you are not limited to that. Seafood lovers we’ve got you, this recipe is everything!

Ingredients

450 grams jumbo shrimps

1 tbsp olive oil

1 pc garlic

1 tbsp basil

1 tbsp parsley flakes

1 pc lemon

1 pc seasoning cube

2 pinches black pepper

2 tbsps unsalted butter

2 pinches salt

Method

If frozen, defrost and pat the shrimps dry with a disposable paper towel. Place shrimp in a bowl and season with stock cube, salt and black pepper.

Put frying pan/skillet over medium heat. Add in the butter and allow to melt, pour the olive oil and turn up the heat.

Add shrimp to the pan (spread out) and cook without stirring for about 1 minute. Flip shrimps to the other side and cook for about 2 minutes. Add one crushed garlic clove, chopped basil, chopped parsley and 1 tablespoon squeezed lemon juice. Stir and allow to cook for another 2 minutes.

Serve sauce over linguini or pasta of choice.

Sweet And Spicy Peanuts

Love anything sweet and spicy? This recipe is for you! Expect a perfect blend of fiery and sweet that will have you continuously dipping your hands into this bowl of goodness. The slow-cook method is well worth your while. Make as spicy as you desire.

Ingredients:

3 cups peanut bottle

7 tbsps sugar

4 tbsps brown sugar

2 tbsps pepper sauce

1 teaspoon chilli powder

2 tbsps canola oil

Method

Put the peanuts in a slow cooker. Mix the sugars, butter, 1 tablespoon water and the peppers in a bowl. Pour the mixture over the peanuts.

Cook for about 1 hour 30 minutes and stir twice within this period.

Line a baking sheet with parchment paper and pour in the peanuts. Make sure to spread them out.

Allow to cool completely.

Bacon Wrapped Mini Sausages

Everything is better with bacon!! Here is another finger food for that little shindig you have planned this weekend. Switch things up a bit and deviate from the usual samosa, spring rolls and puff puff. Be that host that tries something different.

Ingredients:

20 pcs cocktail sausages

250 grams streaky bacon

3 tbsps brown sugar

Method

Set your oven to broil and preheat to 350°F.

Cut the streaky bacon in half, length wise. Wrap each sausage with one bacon streak and sprinkle over some brown sugar. Place in a foil lined baking sheet making sure to tuck the bacon ends underneath. Bake for about 30 minutes or until bacon is golden brown.

Place on paper towel to drain out excess oil.

Pomegranate Cooler

This is one of those special summer drinks that come out every now and then. Good news is pomegranate is a super healthy fruit fortified with vitamin C, K and Potassium. These ruby-like seeds also pack quite a punch when it comes to flavour!

 

Ingredients

750 ml white wine

4 tbsps honey

1 pc lemon

6 pcs pomegranate

1 bunch mint leaves

Method

To make the pomegranate juice – Cut open the pomegranate and pour the seeds to fill 1 cup and add into a blender with ½ cup water. Pulse a few times (this is just to break apart the seeds not blend till smooth). Sieve the juice into a cup removing the shaft. Keep in the fridge to cool. Doing this overnight might be better or you could just allow it cool for about 1 hour. Double the recipe for more juice.

Add 1½ cups pomegranate juice, 750ml white wine and honey in a pitcher. Stir well until the honey dissolves.

Pour into ice-filled glasses. Garnish with whole pomegranate seeds, lemon slices and a sprig mint.
