1 Slower Cooker Sausage & Beans

For those days when you have so much tidying up to do, this meal will save you. You can cook this in a stockpot for about 3 hours if you don’t have a slow cooker. This 7 ingredients meal is so comforting, delicious and goes perfectly well with bread.

Ingredients

430 g beans

340 g smoked sausage

1 pc onions

1 tsp salt

1 tsp black pepper powder

7 cups water

400 g crushed tomatoes

Method

You will have to slice the sausages and also chop the onions and pepper. Wash the beans and set aside.

In a large saucepan, cook the sausage over medium-high heat for about 5 minutes or until lightly brown while stirring occasionally. Add the onions and green pepper before the sausage gets completely browned and cook until tender. Season with salt and pepper as you desire.

Combine the crushed tomatoes, sausage-vegetable mixture, beans and water in a slow cooker. Cover and cook on high heat for about 4 hours or low heat for about 8 hours. You can adjust the water and cook time depending on the consistency and texture you want.

2 Bicol Express

Bicol Express is one spicy Filipino recipe you should try in your lifetime! The dish is named after the train in the Bicol region of Philippines, known for its spicy food. We went that far because we couldn’t resist it. Adjust spiciness to your taste.

Ingredients

900 g pork

3 pcs garlic

2 tbsp vegetable oil

1 pc onions

1 pc tomato

400 ml coconut milk

1 tbsp soy sauce

6 pcs chilli

Method

Firstly dice the onions and tomato and set aside. Mince the garlic and chilli and set aside. Also wash and cut the pork into pieces.

Heat 1 tablespoon of oil in a large saucepan and saute the garlic for about 30 seconds. Add the tomato and onions and saute until the onions becomes translucent.

Add the remaining oil and the pork and saute until the pork is lightly browned. Add the coconut milk and bring to boil. Lower the heat and simmer for about 15 minutes.

Add the chilli and simmer for about 5 minutes. Remove from heat and add the soy the soy sauce and stir.

Serve over a bowl of rice or pasta.

3 Ground Pork With Corn & Potato

We aren’t disappointed at all with this recipe, from the appetizing sight to the scrumptious taste, it is worth it! And guess what? In just 30 minutes you are done fixing this. The vegetable mix makes this meal stand out. Serve over rice and enjoy!

Ingredients

1.35 kg minced pork

1 pc irish potato

2 tbsp olive oil

2 tbsp soy sauce

1 cup corn kernels

1 cup green peas

6 pcs carrot

1 tbsp fish seasoning

4 pcs garlic

1 pc onions

2 pcs tomatoes

125 ml water

1 pc seasoning cubes

1 tsp black pepper

1 bunch parsley (optional)

Method

Firstly chop the onions and tomatoes and set aside. Cube the carrots and mince the garlic. Also peel the potato and cut into cubes.

Heat the oil in a large saucepan over medium heat. Add the onions, tomatoes and garlic and saute for about 3 minutes or until the onions is translucent. Add the minced pork and cook for about 5 minutes or until the meat is no longer pink. Add the carrots, potato and water and simmer for about 7 minutes or until the potatoes are fork tender.

Add the corn kernels, peas and soy sauce. Stir and add the seasoning cubes and black pepper.

Serve with steamed rice and garnish with parsley.

4 Sweet Potato Smoothie

Talking of a sunshine smoothie, this is one. This perfect breakfast meal is easy to make, bursting with citrus, refreshing, creamy and delicious. Try gulping this down as a post-workout snack and thank me later! Fresh orange juice is best for this recipe.

Ingredients

1 pc sweet potatoes

180 ml fresh orange juice

1 pc banana

60 ml full cream milk

2 pinches cinnamon

Method

Make the sweet potato puree first. Cut the sweet potato into half and place face down on a baking sheet. Roast at 400 degrees F for about 25 minutes or until soft. Allow to cool.

Add ½-1 cup of ice cubes and all the ingredients to a blender and blend until smooth.

Taste and adjust sweetness of smoothie with sugar or honey.

Serve in a glass or smoothie cup and sprinkle with cinnamon powder (optional).

5 Madiba’s Oxtail Stew (Umsila Wenkomo)

This oxtail stew was one of Nelson Mandela’s favorite. According to his one-time personal chef, Chef Xoliswa Ndoyiya, ‘Madiba is happiest with traditional food…’ But there’s more to this meal than just being traditional. This meal is unique in very sense of it.

Ingredients

3 kg oxtail

5 pcs carrot

4 pcs irish potato

1 tbsp barbecue spice

1 tsp white pepper

1 tsp salt

1 cup green beans

 

Method

Firstly, peel and chop the potatoes and carrots, then set aside. Slice the green beans and set aside.

Wash the oxtail and cut off excess fat. Put in a large pot and add enough water, bring to boil over medium heat then reduce the heat and cook until the water has evaporated. As the oxtail begins to brown in its own fat, add the barbecue spice and any spice of your choice (preferably paprika).

Add more water and cook the oxtail for about 2 hours or until the oxtail meat is tender. While cooking, keep checking to ensure that there is enough water to cover the oxtail and add more water when necessary.

Add the potato, carrot, green beans and season with about 60 gramms of any soup powder of your choice (preferably oxtail soup powder) and cook for about 30 minutes or until the vegetables are soft.

Serve with dumplings (dombolo).
