Welcome to another edition of SupermartNG’s food recipes for the week:

1 Creamy Mushroom And Spinach Spaghetti

This is a convenient and perfect meal for vegetarians. Its creamy taste gives your spaghetti an entirely new taste. It is tasty and nutritious. A good option for your lazy days. And the good news is salmon lovers can switch mushroom with smoked salmon!

Ingredients

350 g spaghetti
120 g spinach leaves
150 g mushrooms
100 g sour cream
2 tbsps olive oil
2 tbsps cream cheese
1 pc onions
2 tbsps garlic powder
2 tbsps dried ground pepper
2 pinches salt

Method

Firstly chop the onions and spinach, and cut the mushrooms into halves.
Cook the spaghetti for about 8 minutes in a lightly salted water. drain the water into a bowl and set aside.
Set a large pan over medium heat. Add the oil, chopped onions, halved mushrooms and garlic. Cover and allow to cook for about 5 minutes. Add the chopped spinach and cover with a lid. Stir occasionally until the spinach are tender. Add the pepper and salt to taste.
Add the drained spaghetti into the sauce pan. Stir in the sour cream, the cheese and the water drain from the spaghetti if necessary.
Mix properly. Season with more pepper and salt to taste and allow to cook for few minutes.
Serve hot.

2 Sausage Dirty Rice

Do not underestimate this exciting meal. It looks dirty but not dirty! You sure want that experience where every scoop comes with sausage. Here it is right in your face. To get the best of experience, you can garnish it with scallions or spring onions.

Ingredients

1 cup uncooked rice
4 tbsps unsalted butter
2 tbsps plain flour
1 kg pork sausages
1 cup chicken stock
2 tsps garlic powder
2 tsps black pepper
1 tsp paprika
1 tsp cumin powder
2 pcs spring onions

Method

Cook the rice in a lightly salted water for about 20 minutes or until tender. Drain off the water and set aside. Dice the spring onions and set aside.
Begin by preparing the roux. Whisk 2 tablespoons of butter and the flour in a sauce pan. Continue this process for about 5 minutes or until mixture turns dark brown. Set aside.
In another thick-bottom sauce pan, add half the sausage, the paprika, cumin and black pepper. Mash the sausage and mix well to allow the spices set in.
Add ½ cup of the chicken stock to the mashed sausage as it begins to stick to the pan. Add in the garlic and roux . Reduce the heat and uncover for 10 minutes.
Add the remaining chicken stock as desired so that the mixture does not dry out. Continue to check and stir occasionally.
Add in the cooked rice and remaining 2 tablespoons of butter. Stir properly. Garnish with diced spring onions and serve.

3 Creamy Cucumber Avocado Salad

Enhance the presentation of your meal and impress your guest with this unique salad The deep flavor that comes with lime zest gives this salad a great taste. You can give this salad your own look by cutting the cucumbers and avocados into desired shape.

Ingredients

2 pcs cucumber
2 pcs avocado
100 g Cheese
1 cup mint leaves
4 pcs lime
2 tbsps olive oil
1 tsp lemon pepper
1 tbsp salt

Method

Firstly peel the cucumber. Cut vertically into halves and scoop out the seeds and cut into small pieces. Put in a sieve and sprinkle with the salt. Allow to drain for about 30 minutes. Rinse and clean with paper towel. This process is to prevent the salad from being watery.
While draining the cucumber, dice the cheese, squeeze out the lime juice into a bowl. Using a hand grater, grate the lime zest to fill ½ cup. Peel and dice the avocados, cut into small pieces, sprinkle with 2 tablespoons of lime juice and mix gently.
Prepare the dressing by whisking in a bowl, 2 tablespoons of olive oil, 2 tablespoons of lime juice and ½ cup of lime zest.
To the bowl of dressing, add the cucumbers, avocados, ½ of chopped mint and diced cheese. Mix gently. Add the lemon pepper to taste. Cover the bowl and refrigerate for about 30 minutes to allow the flavors blend.
Serve.

4 Watermelon Juice

This drink is surely a glow from within drink! It is a combination of vitamins and minerals. A good way to refresh yourself after a long sunny day. Garnish with a slice of cucumber and give yourself a perfect treat after a long stressful day at work.

Ingredients

1 pc watermelon
6 pcs strawberry
2 pcs apples
1 pc cucumber
1 pc lime

Method

Firstly cut the watermelon. Remove the seeds and dice to fill one cup. Hull the strawberries and dice to fill ¾ cup. Dice the cucumber and apple to fill ½ and one cup respectively.
Cut the lime and squeeze out juice to fill one teaspoon. Set aside.
Put the diced watermelon, strawberry, apple and cucumber in a blender. Add one teaspoon of lime juice and blend until smooth.
Pour through a fine mesh into a bowl. Refrigerate the juice for about 30 minutes.
Serve cold.
