1 Sweet Potato Biscuit

Sweet potato is one of those vegetables that fit into so many uses and here we are with a sweet potato biscuit in hand! This will be perfect for breakfast and as a snack. The kids will cheer you up when making this because sweet potato is sweet anytime.

Ingredients

200 g all-purpose flour

6 tbsp butter

4 tbsp baking powder

2 tbsp sugar

4 tbsp full cream milk

1 tsp salt

4 pcs sweet potato

Method

Preheat the oven to 450 degrees. Spray the baking sheet with cooking spray and set aside. In a bowl, Mix the flour, sugar, baking powder and ½ teaspoon of salt then set aside.

Mash the sweet potato (boiled) using a potato masher in a large bowl, ensure the mashed potato fills 1 cup. Add 4 tablespoons of butter and continue to mash until the butter dissolves in the potato.

Add the flour mixture to the potato mixture and mix thoroughly until a dough is formed. Add milk, a tablespoon at a time until all the ingredients adhere.

Turn the dough on a floured board and knead lightly for about 2-3 minutes until the dough becomes smooth. Roll the dough out to 1 inch thickness and cut the dough with a biscuit cutter.

Transfer the cut dough on the baking sheet and brush the top and side of each of them with the remaining butter (melted).

Bake for about 15-20 minutes or until done. Brush with remaining melted butter.

2 Korean Beef

To think that this Korean beef recipe comes together in minutes and is better than take out version! It is so cool for busy nights and a good way to avoid pricier meat. This is one Asian recipe that will not give you a hard time sourcing for ingredients.

Ingredients

450 g minced meat

4 pc garlic

1 tbsp vegetable oil

4 tbsp brown sugar

2 tbsp corn flour

3 tbsp chilli paste

1 cup peas

3 ps spring onions

½ tsp salt

5 tbsp soy sauce

1 pc ginger

Method

You will need to slice the onions, mince the garlic and cut the ginger into matchstick size.

Heat the oil in a large saucepan over medium heat and brown the meat. Drain thoroughly, add the ginger and garlic and simmer for few minutes or until fragrant.

Mix the sugar, chilli sauce, corn flour and soy sauce thoroughly in a bowl. Pour the mixture over the beef and allow to simmer for about 2 minutes to blend the flavour and slightly thicken the sauce.

Finally, add the peas and stir. Allow to simmer for few minutes. Remove from heat.

Serve and garnish with spring onions.

Ingredients

900 g carrot

4 tbsp olive oil

1 tsp cumin powder

1 tsp ground cinnamon

1 tbsp salt

Method

Preheat the oven to 350 degrees F. Line several baking sheets with parchment paper and set aside.

Trim carrot tops off and peel the carrots into thin strips using a vegetable peeler.

Place the carrot slices in a bowl, drizzle with oil and add the salt, cumin and cinnamon. Toss well to coat then lay the slices in a single layer on the baking sheets.

Bake for 6 minutes or until the edges start to curl. Flip all the chips over and bake for another 6 minutes to crisp the bottoms. Allow to cool.

Serve or store in an airtight container for up to 2 weeks.

Ingredients

4 pcs orange

80 ml vodka

1 tsp sugar

Method

Squeeze juice out of the fresh oranges and discard the pulp.

Combine the orange juice, vodka, sugar (optional) and 1½ cups of ice in a pitcher and stir.
