1 Pineapple Cabbage Slaw

You don’t have to rob a bank to stay healthy! Sometimes you need to keep it fresh and simple by cutting off Mayonnaise. The sweetness of this tangy salad is here to brighten your day. Suitable for vegetarians and goes well as a side dish or an appetizer.

Ingredients

100 g cabbage

60 g carrot

1 pc pineapple

2 tsp lemon juice

1 tsp black pepper

1 pinch salt

Method

Firstly peel the pineapple, dice into cubes and put in a large bowl. Shred the cabbage and grate the carrot and put into the bowl of pineapple and toss.

Combine the lime juice, pepper and salt in a small bowl and mix thoroughly.

Toss all the ingredients together and serve.

2 Flourless Chocolate Cake

This is a rich, fudgy and utterly decadent cake pretending to be a brownie! It’s weekend worthy because we know that weekend calories don’t count. The texture and chocolaty taste of this cake is sensational, we just couldn’t wait to share this with YOU!

Ingredients

340 g dairy milk chocolate

1 cup sugar

6 pcs eggs

4 tbsp cocoa powder

1 tsp salt

12 tbsp unsalted butter

1 tbsp chocolate essence

Method

Preheat the oven and grease a 9″ springform baking pan.

Cut the chocolate into small pieces and combine the butter in a small pan placed over medium-low heat. Stir continuously until both are completely melted. Set aside and allow to cool.

Crack 4 of the eggs into a medium-sized bowl and carefully transfer the yolks into another bowl. Add the cocoa powder, chocolate brown extract, the remaining 2 eggs and half of the sugar. Whisk well to combine.

Add the cooled chocolate mixture to the yolk mixture and whisk to combine, then set aside. Beat the egg white until frothy using an electric mixer set on medium-high,. Gradually beat in the remaining sugar.

Fold in the egg white mixture into the chocolate mixture and stir well until well incorporated. Pour the batter into the prepared pan and smooth the top with a spoon.

Bake in the preheated oven for about 40 minutes. Transfer the cake to a cooling rack and allow to cool.

Dust the cake with cocoa powder, icing sugar or top with whipped cream and berries.

3 Brazilian Stroganoff

Try something different from a tomato stew this season. This is one traditional recipe every Brazilian grew up eating. The goodness of this recipe is the infusion of yoghurt and mushroom. Whip up more because your family will definitely ask for more!

Ingredients

450 g beef sirloin

1 cup mushrooms

1 pc onions

1 tbsp olive oil

1 tbsp soy sauce

1 tbsp Dijon mustard

1 cup chicken stock

110 g tomato paste

2 tbsp unsalted butter

1 tsp salt

125 g plain yoghurt

1 tsp black pepper

1 bunch parsley

1 tbsp all-purpose flour

1 tsp garlic

Method

Wash and chop the beef and set aside. Dice the onions and chop the parsley and set them aside. If the mushrooms are not sliced, slice them and also set them aside.

Mix the flour, pepper, garlic and ½ teaspoon of salt in a bowl and add the beef. Mix thoroughly with hands until every piece of the beef is coated with the seasoned flour.

Heat the oil in a large frying pan over medium -high heat. Add the mushroom and cook until golden. Add the seasoned beef and cook until barely brown then stir in the onions and cook until slightly golden.

Add the stock and scrape off any bits stuck to the pan with a spoon. Reduce the heat to medium-low and allow to simmer.

Add the soy sauce, tomato paste and ½ tablespoon Dijon mustard. stir and cook for about 5 minutes. Remove from heat and stir in the yoghurt, until well combined.

Serve over rice and garnish with parsley (optional).

Chocolate Guinness Float

Chocolate is our true love no doubt that was why we choose chocolate for this recipe. I know Guinness lovers will crawl out to grab this recipe but here is one advice -Drink responsibly! And if you cannot partake because of the beer, substitute with coke.

Ingredients

1 can Guinness Extra Stout

1 L chocolate ice cream

2 tsp chocolate essence

Method

The ingredients will make 2 glasses. Scoop 2 big scoops of ice cream into each glass and add 1 teaspoon of chocolate essence into each glass. Pour in half of the Guinness into each of the glass.

Serve.
